Ingredients:
2 eggs
salt and pepper to taste
Add ins: avocado, ham, sausage, bacon, chicken, steak, wild rice, farro, vegetables (preferably cooked) - don't be limited by this list, let your imagination run wild.
Method:
Heat 1 -2 teaspoons of butter over medium heat in a small skillet.
Break the eggs into a dish and stir vigorously to combine. This is crucial, as you need to really mix those eggs together.
If your omelet filling is cold, warm it in the microwave and set aside. This would apply to leftovers like sausage, ham, bacon, veggies. Since these aren’t going to spend much time in the pan, it is important to rewarm these in advance. If you are using fresh ingredients like onions, shallots, bell peppers, these can be sauteed in a separate pan and set aside until you need them.
Once the butter is melted, pour in the eggs and move the mass around in the skillet until it is almost set. Flip the omelet to allow the uncooked egg from the top to set.
Immediately add your topping to the top of the omelet. Flip one half of the omelet over the other half and slide on to a plate. That's it.
